Weekly Photo Challenge, “What’s Cooking”
the subject from furtherthoughts is:
“What’s Cooking”
Mine is a very simple recipe and I call it a country plate. You can vary the vegetables and the meats and you could put a sauce of some kind on it. I like it with a tomato sauce but haven’t used any with it here.
My Photos
I get everything ready to go. Here you see a bit of FRESH grated Parmigiano-Reggiano cheese on the right followed with fresh carrots thinly sliced, cubed potatoes, onion more or less cubed, sweet green peppers which I love and a type of spicy sausage which I cut into rounds.
I put the veggies into olive oil I have peppered then toss them to coat a bit then cook them in the Microwave. These took 6 minutes as you see them.
I added the cuts of meat to the veggies, tossed them then back into the microwave for 4 minutes. The meat is precooked so I like to get it hot but prefer not to cook it a lot as it shrinks and gets tough.
I added a bit of dried parsley and the parmesan cheese garnish. Add salt and pepper to taste.
This takes a very short amount of time and it’s tasty. I fixed it for John’s lunch if that gives you a hint how quick and easy it is.

Very tempting! I think I must overcook meat as it’s quite often on the chewy side. I’m improving though, the last chicken casserole I did was just right. It wouldn’t occur to me to cook a whole meal like this in a microwave, I’m behind the times I guess.

Oh, yum! I’m glad I had lunch before I got to this. One of my family’s favorite dishes uses the same type of ingredients. I stir fry it in a cast iron skillet and call it hash.

@SuSu - Oh yes, the veggies plus tender beef with a bit of beef stock and you would have hash. So many things you can do. Cooked Chicken breast in pieces and a chicken gravy or little meat balls and a spegetti sauce. Darn, my mouth is watering now. Anyway, fast and easy and a good thing to make when you have left over meats to use with it. Even slices of meat loaf and a tomato gravy or peeled shrimp and a white sauce. Darn, thinking we need to do this more often. Food is a favorite subject of mine.
@Zimbo - I don’t think you are behind the times per microwave cooking. I think most people are more or less afraid of a meal in a microwave and it takes practice with some things. Definitely not like an oven or range top. I don’t do all my cooking in a microwave but have had fun experimenting with it.
These photos are so realistic that I’m getting hungry. My kind of food.

More you scroll down and more the dish becomes exciting . The cheese looks like perfumed snow . And the veggies looks so fresh and so colorful . I long to be in summer for the crops in the garden !

@eneventure - you remind me of myself. I really avoid medications prescribed or otherwise so take them when I’m dying, only. Too many side effects especially if we took everything the pharmaceutical companies think we should take. I hope the pill did the trick.

That looks like a dish one of the church ladies brought for my son and husband to eat while I was recovering from gastric bypass surgery nearly eight years ago. They said how good it was and it smelled great. Like your pic, that was as close as I got.
@PhotoGraphics - The pill did. It must be a low dosage because it doesn’t dry me out like I’ve had in the past. Makes it easier to take it again!
